Chef Rudy's words... "When you think of Filipinos, you think doctors, nurses and engineers. You never think of great chefs. We need to change that thinking!" I have heard Chef Rudy, owner of Il Chianti, say that to others and he is absolutely correct. Chef Rudy does not cook straight up Filipino food but his restaurant is an upscale Italian Steak, Seafood and Wine restaurant. If you are looking for Fil dishes, he does have a few that are fusion Italian and Filipino which are also delicious. I have been to Il Chianti for a couple years because of the food, the chef and the friendliness of the place. Chef Rudy hails from my parents homeland, the Philippines. From his humble beginnings, how he started in the restaurant business, worked with the famous Charlie Trotter up to opening Il Chianti is the American Dream. Why he chose Italian instead of Filipino food is an interesting story in itself, have him tell you why when you visit! Over the decades he has traveled to Italy, has been educated and worked with the best. Chef Rudy has the knowledge and experience of upscale Italian food and wine that is impressive. He is quite the character and does come out during the evening to greet his guests, which is just Filipino hospitality to the core. The food here is delicious and I cannot pinpoint my favorite dishes. I do like the Adobonation style dish which is a Fil-Italian fusion. Instead of rice this fusion dish is served with Risotto, pretty genius! Any of his pasta dishes are incredible as well especially the alfredo cooked on a cheese wheel with a blow torch! Yeah that blew me away! The Shrimp Bruschetta is also delicious if you are looking for a good way to start your meal. I also recommend trying out one of the specials of the day. I once was served a delicious Sea Bass topped with Crab Cake- so good! Save room for dessert though. Chef Rudy and his pastry chef make incredible desserts such as his Crème Brulee Cheesecake. I was blown away with that one! Yes, Il Chianti is an amazing place only because the owner has heart! He works hard and has passion.
