72 HOURS IN SAN IGNACIO, BELIZE: San Ignacio is the perfect entry-level adventure destination. First, head to Ian Anderson's Caves Branch and rappel down the Black Hole Drop, a 300-foot sinkhole. Canoe through the stunning, yet often overlooked, Barton Creek Cave. Unlike the more popular ATM Cave, you can actually take pictures in this one. Zipline through the jungle on Belize's largest zipline at Bocawina Rainforest Resort and Adventures. This zipline course, located inside a national park, features a 2300-foot line. Explore the Mayan ruins of Cahal Pech at sunset. Stay at the uber-eco-touristy Black Rock Lodge, in the heart of the jungle, and mountain bike to some nifty waterfalls, including the small yet beautifully rocky Vaca Falls. Spend an hour at St. Herman's Cave, in St. Herman's Blue Hole National Park. It's small, it's walkable, it's gorgeous. Hike to Antelope Falls and swim in an incredible, cool, secluded pool at the top after climbing a steep, root-filled trail. Eat at any number of tiny, authentic restaurants on Burns Avenue in downtown San Ignacio, most of which feature patios and deeply discounted drinks.
