Died and gone to vegan heaven! I had this delicious vegan curry was cooked from scratch at an open garden restaurant in San Cristóbal de las Casas, a small town in the mountains of southern Mexico. Jardin Tonantzin has an entirely vegan menu filled with tasty options like chile rellenos, enchiladas, curry, sandwiches, salads, and more! I indulged in a soy latte (decaf, hello!) and the yellow curry (added tofu, protein!). My Hubble had the chile rellenó which came with fresh tortillas. Both dishes were EXQUISITE, and I will definitely be coming back for more while we’re here!
