Ippudo NY
Ippudo helped kick off the ramen craze when it opened almost 10 years ago and the waits have been crazy ever since. Their signature bowl is the Akamura Modern whose rich tonkotsu remains the standard by which all others are judged. If you only eat one bowl of ramen in NY, this should be it.

Mr. Taka
Mr Raka’s chicken and fish Bonito stock has the richest flavor of any non-Tonkotsu broth I have encountered. And lest you worry about not getting your fill of swine, there’s plenty of delicious ground pork and belly layered on top. They do also make a great Tonkotsu if you’re in the mood for it.

Zundo-Ya
Zundo Ya is perfect for those days when you don’t want to wait 2 hours at Ippudo. It’s only a few blocks away and I’ve never waited more than half an hour. Some bloggers claim they prefer it although I think the broth doesn’t have quite as much flavor. Still it’s pretty damn good and a lot easier to get in to.

Bassanova Ramen
The reason to come here is the green curry ramen. This isn’t a coconut milk curry like you get in a Thai restaurant, but it packs a lot of the same flavors and heat.

Ivan Ramen
Ivan is known as the white Jewish guy who took Tokyo’s ramen scene by storm. Now he’s back in the States cooking up his signature chewy rye noodles in the Lower East Side. Get them spicy.

Karakatta
From the team behind Mr Taka, Karakatta focused on HEAT. Everything here is spicy but if you love heat like I do, you’ll love you can eat here with significantly shorter waits than the original.

Ichiran
This wins points for being the most customizable Ramen- you can select every aspect of your bowl down to the broth thickness, how the noodles are cooked and how much if their delicious chili paste you want.

Nakamura
Chef Jack Nakamura is a legend in Japan and eating here it’s easy to see why. While more classic bowls are great I love the Japanese Curry Spiced. The cumin and tumeric make it an unforgettable experience.
