Chef Jose Andres showed Andrew some of the classics he offers on the menu at two of his restaurants. Jaleo is known for its tapas menu. They have paella, sea urchin, cones of marmalade, and goat cheese and more.

Florida Avenue Grill
Andrew met up with culinary historian Michael Twitty. Andrew tried chitterlings, stewed pork intestine, and scrapple, pig organs and scraps mixed with cornmeal, pressed and chilled into a loaf, and then sliced and fried.

The Source by Wolfgang Puck
Snakehead fish is a new item on the menu at the Wolfgang Puck restaurant The Source. Andrew Zimmern sampled oolong tea-smoked snakehead, and snakehead marinated in chilies, then batter-fried and served with Thai curry sauce.

La Chiquita Restaurant 3
Andrew visited La Chiquita, known to have the best pupusas in DC. Andrew had yuca frita, made with cassava root; curtido, a mix of pickled cabbage, onion and carrots; fried baby sardines; and pupusas stuffed with meat and sometimes cheese.
